Beschuit is a round, dry, twice-baked Dutch rusk, lighter and crispier than toast. The country’s most famous use is beschuit met muisjes: rusks topped with butter and muisjes (sugar-coated anise seeds) in pink-and-white for a baby girl, blue-and-white for a boy. New parents serve the topped beschuit to family and visitors in the days after birth, and Dutch hospital maternity wards sometimes stock them for the first morning. The tradition dates to the 17th century, when muisjes were thought to support breastfeeding. Bolletje and Van Delft dominate the modern beschuit market.
