What is “kacchi kairi” in Hindi cuisine?
कच्ची कैरी (kacchi kairi) is the Hindi term for unripe green mango, the raw fruit before it ripens into the yellow aam. Across North India, kacchi kairi is a seasonal cooking staple: it’s pickled into aam ka achaar (mango pickle), turned into the sour summer drink aam panna, ground with mint into chutneys, and used in kitchen-table snacks with salt and chili. Indian summers are punishing, and kacchi kairi's tartness sits at the center of the seasonal balance.
