What does 'belezvalók' mean in Hungarian cooking?
Belezvalók is a Hungarian compound from bele (into [it]) + való (to be put), literally the things that go into it. Hungarian builds nouns by stacking these clear pieces: gulyásba való (for goulash), levesbe való (for soup), süteménybe való (for cake). Belezvalók in the plural names the whole roster of ingredients a gulyás or főzelék needs.
In this short clip, a Hungarian speaker walks through his favorite: a bean dish from childhood, with the right belezvalók stacked in. « A belezvalókat, ami tenni belejön. Sárgarépa, döntse, meg a többi » (the ingredients that go in: carrot, beans, and the rest). « És az is fontos, hogy milyen bab » (and the kind of bean matters too).
