What does “incontournable” mean in French?

You will see this word everywhere in French travel writing. An incontournable is a place, food, or event you really should not miss. The word history tells you why: contourner means “to go around” something, and in- means “not.” So an incontournable is something you cannot go around — you have to stop and experience it. It works as an adjective (“un lieu incontournable”) and as a noun (“c’est un incontournable”).

The video lists places to visit near Lyon and opens with “nos vingt-quatre incontournables pour réussir votre séjour” — “our twenty-four must-sees to make your trip a success.” Here the word is used as a noun: the 24 things you cannot skip. The word comes from contourner, “to go around / to bypass.” Add in- (“not”) and you get “that cannot be gone around” — so, in real life, “unmissable, essential.” It is very common in travel and tourism French, but you also hear it in everyday contexts: “C’est le restaurant incontournable du quartier” (the one restaurant you can’t miss in the area), or “Ce film est devenu un incontournable” (this film has become a classic everyone knows). Note: incontournable is a warm, positive word — a strong tip. Do not mix it up with inévitable, which often means something bad you cannot avoid.
