What does “العصيد” (al-aseed) mean in Arabic?
العصيد (al-aseed) is a thick, dome-shaped porridge made by kneading wheat flour into boiling water or broth until it sets solid. It is then inverted into a bowl and drenched in مرق — a meat or chicken broth. One of the oldest continuously prepared dishes in the Arab world, aseed is eaten communally by hand from a single shared bowl, making the word as much a social act as a food.
The name comes from the Arabic root عصد, meaning “to twist” or “to knead,” describing the vigorous stirring that gives the porridge its dense, smooth texture. In this clip the cook prepares المرق الحامض — the sour broth variant — using tamarind (حمر), coriander, cumin, and tomato, all blended smooth before being poured over the finished aseed. If the broth lacks tartness, the cook’s advice is simple: add more tamarind or a squeeze of lemon.
