What is a Hebrew sufgania?
סופגנייה (sufgania) comes from sfog, the Hebrew word for sponge (itself borrowed from Greek spongos). The food is the round, jelly-filled doughnut Israelis eat through the eight nights of Hanukkah, fried in oil to commemorate the Maccabean miracle of the Temple oil that lasted eight days. Bakeries swap the jam for dulce de leche, halva or pistachio cream by mid-December.
In this Kobi Edri clip, the family skips frying altogether for a quieter Hanukkah cookie session: store-bought chilled botzek prikh (shortcrust), a menorah-shaped cutter, eight minutes in the oven. The kid handles it solo. Half the joy of Israeli holiday cooking is letting the children own the assembly line.
