What is Israeli “salat selek”?
סלט סלק (salat selek) is the Hebrew name for cold beet salad, but the cultural angle is the bigger picture: Israeli meals open with a constellation of small cold salads called salatim. Hummus, matbucha, eggplant, carrot, cabbage, and almost always salat selek alongside. They sit on the table while you wait for Kiddush on a Friday night, and snacking before the blessing is half the fun.
The clip is a Foodik kitchen routine: boil two whole selek beets for ninety minutes, slip the skins off, slice, toss with sliced batzal sagol (purple onion), vinegar, cumin, salt, pepper. Standard, fast, and exactly what shows up across the country every erev Shabbat.
