This step-by-step video makes апетитка (apetitka), a thick roasted-pepper, tomato, and garlic relish: «Днес ще приготвя апетитка в буркани» (“today I’ll make apetitka in jars”). It’s a close cousin of лютеница, and the cook even compares the texture to it. The name comes from апетит, “appetite,” because a spoonful is meant to whet yours before a meal.

Crucially it’s made за зимата (“for the winter”) and sealed in jars, part of зимнина, the Balkan tradition of putting up preserves each autumn. Bulgarian pantries fill with apetitka, lutenitsa, and pickles to last till spring. It’s comfort food you spread on bread all winter.
