What does “crosticina” mean in Italian?
Crosta means crust. Add the diminutive -ina and you get crosticina: a thin, golden “nice little crust” — the crisp layer you fry onto food. The suffix doesn’t just shrink the word; it makes it appetising and affectionate, the way a cook talks about the best bit. It’s the same move that turns plain crosta into something you actively want, not merely describe.
Here the gyoza must go back to frying per far sì che si formi questa crosticina — “so that this nice little crust forms” — and then they lift off the pan easily.
