What are “microgreens” at American farmer’s markets?
Microgreens are tiny edible plants harvested only one to three weeks after the seed sprouts, when the first true leaves appear. Common types include sunflower, pea shoots, radish, and broccoli microgreens. They started as restaurant garnish in the 1980s in Southern California and spread to home cooking through farmer’s markets in the 2010s. Americans now buy them in small plastic clamshells (the hinged-lid containers) at farmer’s markets and Whole Foods. They’re prized for nutrient density and a sharp, fresh flavor that adds bite to salads and sandwiches.
