What does “afrato” mean in Greek?
Pulling a no-mixer loaf from the oven, the baker shows off the texture: «Κοίτα πώς αφράτο είναι» (“look how fluffy it is”). Αφράτο (masculine αφράτος) means “fluffy, airy, soft,” the prized quality of good bread, cake, and pastry, from αφρός (“foam”), so literally “foam-like.”
It’s the highest praise in a Greek kitchen for anything light and pillowy: αφράτο ψωμί (fluffy bread), αφράτο κέικ (airy cake). Affectionately it even describes soft, plump cheeks. If a Greek grandmother calls your bake αφράτο, you’ve passed the test.
