What is a “kapsalon” in Dutch food?

Kapsalon is the Rotterdam fast-food invention now eaten across the Netherlands and Belgium: a tray of fries topped with shawarma or doner kebab meat, smothered in cheese, gratined under a salamander, then crowned with garlic sauce, sambal, and shredded lettuce-tomato. The dish was invented in 2003 at a Rotterdam shawarma counter, named after the hairdresser (kapsalon) who ordered it daily for his lunch break. It’s now on every Dutch and Belgian snackbar menu, and a regular fixture in Dutch food rankings and YouTube taste-tests.
