What is a Dutch “kroket”?

A kroket is the Dutch deep-fried snack: a breadcrumb-coated cylinder of thick ragout (typically beef, chicken, or veal in a roux base), flash-fried until crisp on the outside and molten inside. Brought from France in the late 1800s, the kroket evolved into a uniquely Dutch shape and is now a snackbar staple alongside frikandel, bitterbal, and kaassoufflé. The broodje kroket (a soft milk-roll with a kroket inside, mustard on top) is the country’s most-iconic broodje order. Van Dobben, Kwekkeboom, and Ad van Geloven dominate the Dutch kroket market.
