What is a Dutch “frikandel”?

A frikandel is a Dutch deep-fried snack: a long, skinless sausage made from a mix of mechanically-separated chicken, beef, and pork, fried until crisp on the outside and soft inside. Invented in the 1950s by Dutch butcher Gerrit de Vries in Dordrecht, the frikandel became the country’s most-eaten snackbar item. The default order is frikandel speciaal: split lengthwise and topped with curry, mayonnaise, and chopped raw onion. Snackbars and cafetaria’s across the Netherlands sell tens of millions of frikandellen annually, alongside kroketten, bitterballen, and kaassoufflé.
