Why does Rajasthani cooking lean on “imli” (tamarind)?
Rajasthani cuisine, shaped by the punishing summers of India’s northwest desert, leans heavily on इमली (imli), tamarind. The dark, sticky pulp of the tamarind fruit is folded into curries, chutneys, and pickles to add tartness and a cooling effect against the heat. Rajasthan’s temperatures regularly cross 45°C in May and June, and traditional cooking turns to imli alongside aamchur (dried mango powder) to balance the body.
