What is “ostemad” in Danish?

Ostemad is the Danish open-faced cheese sandwich: a single slice of rugbrød (dark Danish rye bread) topped with butter and cheese, often Havarti, Danbo, or aged Vesterhavs. It’s the everyday cousin of smørrebrød, the more elaborate open-faced sandwich tradition Denmark is famous for. Danes eat ostemad for breakfast, school lunch, and quick afternoon snacks; the bread base is a dense rye that lasts several days and travels well in lunch boxes.
