What does “antrykot” mean in Polish?

This high-protein recipe sears one cut in particular: «Steka z antrykotu doprawiamy z obu stron» (“we season the ribeye steak on both sides”). Antrykot is ribeye, or entrecôte, the well-marbled cut from along the ribs.

Like much Polish kitchen vocabulary, it’s borrowed from French (entrecôte, “between the ribs”), the same drawer that gave Polish beszamel (béchamel) and majonez (mayonnaise). Knowing the cuts helps: antrykot (ribeye), polędwica (tenderloin), rostbef (roast beef). Order an antrykot and you’ll get a steak built to sear.
